Jackfruit Fried Rice
- RECIPE MAKES: 2 portions
- COOK TIME: 25 minutes
Method
Step 1
Heat the oil in a frying pan on medium heat.
step 2
Add the jackfruit, mushrooms, pepper, courgette, baby corn, spring onion and garlic and cook for 5 minutes.
step 3
Stir in the rice and cook for a further 10 minutes.
step 4
Add the sweet chilli sauce and stir through and serve.

Add some chilli powder for a spicy kick!

- 2 tbsp Sesame oil
- 150g Tinned Jackfruit, drained and shredded
- 50g Mushrooms, finely diced
- 50g Red pepper, finely diced
- 50g Courgette, finely diced
- 50g Baby corn, sliced
- 50g Spring Onion, finely sliced
- 2 Garlic cloves, crushed
- 200g Low protein rice, cooked according to packet instructions
- 3 tbsp Sweet chilli sauce
