Jackfruit Fried Rice

  • RECIPE MAKES: 2 portions
  • COOK TIME: 25 minutes
  • THIS RECIPE IS PROTEIN FREE
Step 1

Heat the oil in a frying pan on medium heat.

step 2

Add the jackfruit, mushrooms, pepper, courgette, baby corn, spring onion and garlic and cook for 5 minutes.

step 3

Stir in the rice and cook for a further 10 minutes.

step 4

Add the sweet chilli sauce and stir through and serve.

Add some chilli powder for a spicy kick!

  • 2 tbsp Sesame oil
  • 150g Tinned Jackfruit, drained and shredded
  • 50g Mushrooms, finely diced
  • 50g Red pepper, finely diced
  • 50g Courgette, finely diced
  • 50g Baby corn, sliced
  • 50g Spring Onion, finely sliced
  • 2 Garlic cloves, crushed
  • 200g Low protein rice, cooked according to packet instructions
  • 3 tbsp Sweet chilli sauce
