Sweet and Sour Vegetables
- RECIPE MAKES: 2 portions
- COOK TIME: 20 minutes
Method
Step 1
Fry the vegetables and garlic in 2 tbsp oil over a medium heat, stir fry for 5 minutes.
Step 2
Add pineapple chunks, pineapple juice and parsley and fry for another 3 minutes.
Step 3
Add sweet and sour sauce to the pan and stir until thoroughly coated. Fry for another 2 minutes and serve.
Serving Suggestion:
Serve with low protein rice or noodles.

- 1 Red pepper, sliced
- 1 Courgette, sliced
- 1 Red onion, sliced
- 1/2 Pak choi, sliced
- 1 Carrots, peeled and sliced
- 6 Mushrooms, quartered
- 1 Garlic cloves, crushed
- 2 tbsp Vegetable oil
- 100g Pineapple chunks + 1 tbsp pineapple juice
- 2 Parsley sprigs, chopped
- 1 pack Blue dragon sweet and sour sauce
