Sweet and Sour Vegetables

  • RECIPE MAKES: 2 portions
  • COOK TIME: 20 minutes
Step 1

Fry the vegetables and garlic in 2 tbsp oil over a medium heat, stir fry for 5 minutes.

Step 2

Add pineapple chunks, pineapple juice and parsley and fry for another 3 minutes.

Step 3

Add sweet and sour sauce to the pan and stir until thoroughly coated. Fry for another 2 minutes and serve.

Serving Suggestion:
Serve with low protein rice or noodles.

  • 1 Red pepper, sliced
  • 1 Courgette, sliced
  • 1 Red onion, sliced
  • 1/2 Pak choi, sliced
  • 1 Carrots, peeled and sliced
  • 6 Mushrooms, quartered
  • 1 Garlic cloves, crushed
  • 2 tbsp Vegetable oil
  • 100g Pineapple chunks + 1 tbsp pineapple juice
  • 2 Parsley sprigs, chopped
  • 1 pack Blue dragon sweet and sour sauce
