Fry the vegetables and garlic in 2 tbsp oil over a medium heat, stir fry for 5 minutes.
Add pineapple chunks, pineapple juice and parsley and fry for another 3 minutes.
Add sweet and sour sauce to the pan and stir until thoroughly coated. Fry for another 2 minutes and serve.
Serving Suggestion:
Serve with low protein rice or noodles.
