- Heat the oil in a pan over a medium heat.
- Add the onion, garlic and chilli, cook for 5 minutes or until softened.
- Stir in the spices and cook for a further minute.
- Add the carrots, parsnips, vegetable stock and ProZero, stir and bring to the boil.
- Reduce the heat and simmer for 20 minutes, until the carrots and parsnips are tender.
- Pour into a blender or use a hand held blender and blend until smooth.
- Season to taste.
