Place zucchini and corn into large mixing bowl. Add flour, salt, pepper and baking powder and mix to combine.
Gradually add water whilst continuing to mix until a batter consistency is formed, not too thick or too thin.
Place oil in pan and heat at a medium to high temperature. You don't want the temperature to high as they'll burn before they cook.
Use a 1/4 cup to measure out mixture and cook one to two fritters at a time until golden brown on both sides.
3.5g per batch (10 fritters)
Fritters can be frozen.
