Place the Fate Low Protein All-Purpose Mix, sugar, mixed spice, baking powder and psyllium husk into a bowl and mix well.
Add the butter and rub between your fingertips to a breadcrumb consistency.
Add the raisins and mix.
In a separate bowl, mix together the egg replacer and ProZero and add to the Fate mixture, knead until a dough forms.
Roll out the dough, using a rolling pin onto a clean lightly dusted surface to 1cm thickness.
Using the cookie cutter, cut out 12 circles from the dough.
Heat a frying pan over a high heat and place 3 of the dough circles into it.
Dry fry the dough circles for 3 minutes on each side.
Turn down the heat to low and allow to cook for another 5-7 minutes.
Remove from the pan and place the cakes on a wire rack to cool.
Repeat steps 8-11 until all the cakes are cooked.
Top tip: Don’t add the sugar to mix and you will have Singin’ Hinnies, popular in the North East!
