Vego Toasty

Step 1

Place vegetables in a suitable container; microwave on High, 1min.

Step 2

Top one slice of bread with heated roasted vegetables and lettuce. Season with salt and pepper, top with remaining slice of bread.

Step 3

Using a brush, spread a thin layer of oil over the top slice of bread. Fry toasty in a heated pan, oil side down, 2mins., or until golden.

Step 4

Carefully flip toasty and brush remaining oil over other slice of bread. Fry further 2mins., serve hot.

Top Tip:

Try adding other protein free vegetables such as grated carrot, caramelised onion, sundried tomatoes to your toasty.   If a little protein is allowed, potato and sweet potato taste delicious.  

For another toasty option, try experimenting with cheese; low protein mozzarella, haloumi, and cheddar increase variety all taste great!

  • 1 cup leftover roasted vegetables (we used eggplant, zucchini, pumpkin, red onion)
