Place vegetables in a suitable container; microwave on High, 1min.
Top one slice of bread with heated roasted vegetables and lettuce. Season with salt and pepper, top with remaining slice of bread.
Using a brush, spread a thin layer of oil over the top slice of bread. Fry toasty in a heated pan, oil side down, 2mins., or until golden.
Carefully flip toasty and brush remaining oil over other slice of bread. Fry further 2mins., serve hot.
Try adding other protein free vegetables such as grated carrot, caramelised onion, sundried tomatoes to your toasty. If a little protein is allowed, potato and sweet potato taste delicious.
