Vegetable Fried Rice

Step 1

Prepare rice according to package directions. Set rice aside once cooked.  

Step 2

Heat oil in a large pan or wok. 

Step 3

Add chopped carrots, minced garlic, minced ginger, onion, and chilli flakes. Cook for approximately 2 min. 

Step 4

Add capsicum, corn, and green beans. Cook for approximately 2 min. 

Step 5

Add cooked rice, pepper, and soy sauce. Cook for a further 2 min. 

Step 6

Toss in spring onions take off heat and serve.

  • 1 cup uncooked Mevalia low protein rice 
  • 2 tbsp oil 
  • 1 large carrot, peeled, chopped
  • 1 tbsp minced garlic 
  • 1 tbsp raw ginger root, minced 
  • 1 small onion, chopped  
  • ¼ teaspoon chilli flakes 
  • 1 medium red capsicum, chopped 
  • ⅓ cup (40g) sweet yellow corn kernels, fresh or frozen 
  • 1 large handful of green beans, ends trimmed and chopped 
  • ¼ tsp ground black pepper 
  • 1 tbsp light soy sauce 
  • 4 medium spring onions, chopped
