Bring a saucepan of water to the boil; prepare pasta according to manufacturer’s instructions. Drain and set aside. Meanwhile, prepare sauce.
Gently heat the butter and olive oil in a fry pan.
Fry the diced shallot and garlic until just starting to turn soft and translucent.
Pour in the white wine and bring to the boil.
Boil for 20 seconds.
Add the tomatoes, white pepper and cooked linguini.
Toss in the pan until heated through.
Fold in the basil leaves and sprinkle with the cheese.

TOP TIP
Put the tomatoes in a small bowl, cover with boiling water for about 5 minutes. The skin should peel away after a small slice to the skin surface. Halve the tomatoes and chop.
