Tasty Tomato Rice

Method
Step 1
Cook low protein rice according to packet instructions. When cooked, rinse in cold water and drain.
Step 2
Heat oil in pan, add onion, carrots, courgette and pepper and fry on a high heat for 4-5 minutes.
Step 3
Add tinned chopped tomatoes and fry for a further 2 minutes until vegetables are soft.
Step 4
Add water and rice to vegetable mixture and cook for 1-2 minutes.
Step 5
Divide into 4 portions and sprinkle Violife over the top.

- 25g Onions, finely diced
- 100g Carrots, peeled & diced
- 100g Courgette, diced
- 50g Green pepper, de-seeded & finely chopped
- 100g Tinned chopped tomatoes
- 50ml Water
- 20g Violife For Pizza mozzarella flavour, grated
