Sweet Potato Pancakes

  • RECIPE MAKES: 8 serves / 1.75g of protein per serve
  • PREP TIME: 20min
  • COOK TIME: 30min
Step 1

Boil the sweet potato in water for 10 minutes or until soft, drain the excess water and puree with a stick mixer or blender. 

 

Step 2

Add in the ProZero, Fate Low Protein All-Purpose Mix, baking powder, brown sugar and egg replacer an mix thoroughly.  

Step 3

Melt butter in a large nonstick pan over medium heat. When butter is foamy, reduce heat to medium-low and pour in ½ cup pancake batter into pan. Cook until bubbles start to form in batter and pancake is golden underneath, about 3min, then flip and cook other side until golden, another 3min. 

 

Step 4

Repeat with remaining batter and serve.

Stick mixer/blender

  • 2 small sweet potatos, peeled and diced 
  • 1 ¾ cup ProZero 
  • 1 ¾ cup Fate Low Protein All-Purpose Mix 
  • 2 tsp baking powder 
  • 2tsp brown sugar 
  • 2 tsp egg replacer (Organ no Egg TM ) 
  • Butter, for cooking
