Boil the sweet potato for 15 minutes or until soft.
Drain the excess water and mash the sweet potato until smooth.
Add the Fate All-Purpose Low Protein Mix and the egg replacer to a bowl, mix until combined and knead until a dough forms.
On a clean surface, dust will a little of the Fate All-Purpose Low Protein Mix, roll the dough into a sausage shape, 2cm thick.
Cut the dough into small 2cm chunks and roll each chunk lightly in the Fate All-Purpose Low Protein Mix on the work surface.
Using a slotted spoon, place dough balls into a pan of boiling water. Be sure that the dough balls do not stick together, gently pull apart any that do. Cook for 5 minutes over medium heat. Using a slotted spoon remove gnocchi and place on a paper towel to dry out.
Place the oil, onion and garlic in a pan over a medium heat and fry for 5 minutes until onion is cooked. Add tinned tomatoes and basil and cook on medium for a few minutes until combined and hot.
Toss the gnocchi in the sauce and divide evenly into 3 serves.
Serving Suggestion:
Leftover serves can be stored in an airtight container, in the refrigerator, for up to 3 days. Alternatively, any individual serves may be frozen for up to 3 months. Remember to clearly label container and that each serve contains 1g protein.
Top Tip:
Serve with Low protein grated cheese and garnish with fresh basil.
Try serving with a fresh, green salad for a complete meal.
Add some chilli into the sauce for a spicy kick!
