Sweet Potato Doughnuts

  • COOK TIME: 1hr 25mins
  1. Boil the sweet potato for 20 minutes or until soft.
  2. Drain the excess water and mash the sweet potato until smooth.
  3. Add the Fate All-Purpose Low Protein Mix, egg replacer, ProZero add the sweet potato mash to a bowl and mix until combined.
  4. Add the margarine, sugar and yeast and mix until you have a dough.
  5. Leave to stand for 10 minutes.
  6. Transfer the dough onto a lightly dusted work surface and knead until the dough stops sticking to your hands. You may need to add more flour if needed at this stage.
  7. Divide the dough into 20 small round balls, weighing 30g each.
  8. Heat your deep fat fryer to 180°C according to manufacturer’s instructions.
  9. Deep fry the dough balls for 5-10 minutes until golden brown.
  10. Using a slotted spoon, transfer to a paper towel and allow to cool slightly.
  11. Roll in the icing sugar and serve.
