Sweet Potato Doughnuts

  • RECIPE MAKES: 20 doughnuts
  • COOK TIME: 1hr 25mins
Step 1

Boil the sweet potato for 20 minutes or until soft.

Step 2

Drain the excess water and mash the sweet potato until smooth.

Step 3

Add the Fate All-Purpose Low Protein Mix, egg replacer, ProZero add the sweet potato mash to a bowl and mix until combined.

Step 4

Add the margarine, sugar and yeast and mix until you have a dough.

Step 5

Leave to stand for 10 minutes.

Step 6

Transfer the dough onto a lightly dusted work surface and knead until the dough stops sticking to your hands. You may need to add more flour if needed at this stage.

Step 7

Divide the dough into 20 small round balls, weighing 30g each.

Step 8

Heat your deep fat fryer to 180°C according to manufacturer’s instructions.

Step 9

Deep fry the dough balls for 5-10 minutes until golden brown.

Step 10

Using a slotted spoon, transfer to a paper towel and allow to cool slightly.

Step 11

Roll in the icing sugar and serve.

Serving Suggestion:
Serve with a bowl of melted Vitabite for dipping!

 

Top Tip:
Add nutmeg, cinnamon or all spice to the mixture for a spicy kick!

  • 10g Egg replacer
  • 100ml ProZero
  • 30g Margarine, melted

  • 7g Dried yeast
  • 10g Icing sugar
