Steam sweet potato and mash.
Place all ingredients into a large mixing bowl and stir to combine until the mixture is of a ”batter” consistency.
Heat oil in a frying pan; add approxiamtley a 1/2 cup of batter, creating small pancake shapes.
Cook, until each side is golden brown and serve.
Top tip:
Serve with steamed vegies or if you your feeling adventurous you could make your own low protein tzatziki using cocobella coconut yoghurt.
