Sweet Pancakes

  • RECIPE MAKES: 4 pancakes 0.5g protein per pancake
  • PREP TIME: 10 minutes
  • COOK TIME: 10 minutes
Step 1

Place Fate low protein all-purpose mix, sugar, margarine, baking powder and baking soda into a mixing bowl and rub together with your fingers until margarine is evenly distributed and mix resembles sand.

Step 2

Whisk in ProZero gradually until a smooth batter is formed.

Step 3

Heat a small non-stick frying pan over medium heat and add 1 tsp oil.

Step 4

Add a ¼ cup of batter to the pan. Tilt pan to allow pancake to thin and spread across bottom of pan. Fry until the top of pancake begins to bubble and turns golden brown, flip over and cook on other side.

Step 5

Cook remaining batter as per steps 3 and 4 above.

Step 6

Serve pancake hot as it is, or with filling of choice.

 

Serving Suggestions – each idea below is enough for 1 pancake:

Fruit and Ricotta
• 2 Tbsp fruit; strawberries, raspberries
• 1 Tbsp reduced fat ricotta cheese**

Lemon and Sugar
• 1 tsp lemon juice
• 1 tsp sugar

Banana and Sugar
• 1 small banana sliced**
• Dusting of icing sugar

 

Top tip:

Leftover pancakes can be stored in refrigerator for 24 hours in a sealed container.

This option will provide an additional 1g of protein. 

*Fate low protein all-purpose mix and ProZero are foods for special medical purposes and must be used under medical supervision. (can this comment be removed from the Top Tip section and added to the bottom of the method to be consistent with other recipes)

  • ¾ cup (90g) Fate low protein all-purpose mix*
  • 1 Tbsp sugar
  • 1 Tbsp margarine
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 150ml ProZero*
  • 4 x 1 tsp vegetable oil
