Cook pasta, as per manufacturer’s instructions. until al dente. Reserve 1 ½ cup pasta cooking water when draining pasta.
Meanwhile, heat oil and butter in a large heavy based pan until butter melts. Add onion and garlic, stir occasionally until very tender and golden brown (Approx. 20-25min). Add pepper flakes and salt.
Add pasta and 1 cup of the reserved water to onion mixture, stir to combine. Add cheese, stir until melted. Add more reserved liquid as needed to create a glossy sauce that coats the pasta.
Stir in the parsley and serve30. Season with black pepper, if desired.

Leftover pasta and sauce stays fresh for 2-3 days in the refrigerator, in an airtight container
