Spaghetti with Caramelised Onions

All you need for this outrageously easy to prepare, tasty meal is a few onions, a couple of cloves of garlic, dried low protein spaghetti, and some low protein parmesan.  Bon Appetite! step 1

Cook pasta, as per manufacturer’s instructions. until al dente. Reserve 1 ½ cup pasta cooking water when draining pasta.

Meanwhile, heat oil and butter in a large heavy based pan until butter melts.  Add onion and garlic, stir occasionally until very tender and golden brown (Approx. 20-25min).  Add pepper flakes and salt.

Add pasta and 1 cup of the reserved water to onion mixture, stir to combine.  Add cheese, stir until melted.  Add more reserved liquid as needed to create a glossy sauce that coats the pasta.

Stir in the parsley and serve30.   Season with black pepper, if desired. 


 

Storage

 

Leftover pasta and sauce stays fresh for 2-3 days in the refrigerator, in an airtight container

 

Top Tip

 

Serve with a big green salad for a complete meal.

  • 1 Tbsp butter (or dairy free margarine)
  • 4 large brown onions, peeled, thinly sliced
  • 2 cloves garlic, peeled, thinly sliced
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 ½ tsp salt
  • 1 cup grated low protein parmesan cheese (Biocheese|Parmesano)
  • ¼ cup finely chopped Italian parsley, optional
  • Black pepper
