Simple Fresh Zucchini Pasta Sauce

Step 1

Cook pasta al dente, according to package instructions.

Step 2

Meanwhile, place oil into a large frying pan over medium-high heat. Add onion and sauté, 5mins.

Step 3

Add zucchini and garlic, sauté further 5mins.

Step 4

Add butter, stock, and lemon juice. Cook, 2mins.

Step 5

Stir in optional parmesan, toss sauce with drained pasta. Season with salt and pepper.

 

Step 6

Enjoy hot.

Top tips:

-Everyone loves this sauce – prepare one serve of low protein pasta and three serves of regular pasta if others prefer.  

-This sauce stays fresh in an airtight container in the refrigerator for 2-3 days. 

  • 250g, uncooked dry low protein pasta
  • 1 Tbsp olive oil
  • 1 medium onion, finely chopped
  • 4 medium zucchinis, diced
  • tsp crushed garlic
  • 1 Tbsp butter or margarine
  • ½ cup vegetable stock
  • 2 tsp lemon juice
  • My Life Bio Cheese Parmesano or Pizza Shred (optional)
  • Salt and pepper, to taste
