Simple Banana Bread

Method
Step 1
Pre-heat oven to 180°C. Grease a loaf tin and line with baking paper.
Step 2
Using electric beaters, cream together margarine, sugar, and essence until pale and fluffy.
Step 3
Beat in banana and milk/lemon juice mix.
Step 4
Quickly stir in remaining ingredients. Pour mixture into the tin, bake 60 mins. or until a skewer inserted comes out clean.
Step 5
Cool cake in tin, 5 mins., turn onto a wire rack to cool completely before slicing.
Ingredients
- 125g softened margarine
- 1 ½ cups brown sugar
- 1 tsp vanilla essence
- 240g mashed banana (4 very small bananas)
- ½ cup rice milk or ProZero mixed with 1 tsp lemon juice
- 250g Fate Low Protein All-Purpose Mix
- 3 tsp baking powder
- ½ tsp each cinnamon, nutmeg
- 2 tsp egg replacer
