Savoury Pancakes

  • RECIPE MAKES: 4 pancakes 0.5g protein per pancake
  • PREP TIME: 10 minutes
  • COOK TIME: 10 minutes
Step 1

Place Fate low protein all-purpose mix, margarine, baking powder and baking soda into a mixing bowl and rub together with your fingers until margarine is evenly distributed and mix resembles sand.

Step 2

Whisk in ProZero and tomato paste gradually until a smooth batter is formed. Stir in mixed herbs.

Step 3

Heat a small non-stick frying pan over medium heat and add 1 tsp oil.

Step 4

Add a ¼ cup of batter to the pan. Tilt pan to allow pancake to thin and spread across bottom of pan. Fry until the top of pancake begins to bubble and turns golden brown, flip over and cook on other side.

Step 5

Cook remaining batter as per steps 3 and 4 above.

Step 6

Serve pancake hot as it is, or with filling of choice (see alongside for suggestions).

 

Serving suggestions:

Ratatouille

Sauté thinly sliced onion, zucchini, capsicum and eggplant; approximately ½ cup of each, in a non-stick fry pan for 3-4 minutes. Add chopped tomatoes, mixed herbs and pepper to taste; simmer until vegetables are soft. Place some of the mixture in the middle of a pancake and roll. Serve hot.

“Cheese” and tomato
Immediately after flipping the pancake, add a small amount of grated protein free cheese (eg. Biolife original). Cook until golden brown on other side and cheese has melted. Top with halved cherry or sundried tomatoes.

Storage Leftover pancakes be stored in refrigerator for 24 hours in a sealed container.

 

Top tip:

If batter does not spread in pan on tilting, cook as instructions above, but after turning sides, flatten top with a spatula.

*Always check the protein content on labels as ingredient can change.

  • 1 Tbsp margarine
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 150ml ProZero*
  • 1 tsp tomato paste
  • Pinch mixed herbs (chopped fresh or dried)
  • 4 x 1 tsp vegetable oil
