Savoury Muffins

  • RECIPE MAKES: 12 Servings / 0.5g protein per serving
  • PREP TIME: 10 minute
  • COOK TIME: 25 minute
Step 1

Pre-heat oven to 200°C.  Line a 12-hole muffin pan with paper patty cases.

Step 2

Sift flour and baking powder into a medium sized bowl; stir in butter, oil, water, vegetables, cheese, salt, pepper, and herbs.  Divide mixture evenly across patty cases.

 

Step 3

Bake approx. 25 mins; until just browned on top. Stand muffins in tray 5 mins; turn out onto wire rack to cool.

Equipment:

12-hole muffin pan with paper patty cases.

 

Top tip:

*We used White Wings® Gluten Free Plain Flour

  • 175g Gluten Free Plain Flour*
  • 2 tsp Gluten free Baking powder
  • 90g butter, melted
  • 2 Tbsp vegetable oil + 1 Tbsp water
  • 1 cup finely chopped low protein vegetables (onion, capsicum, zucchini)
  • ¾ cup low protein pizza cheese*
  • Salt and pepper to taste
  • 2 tsp dried mixed herbs
