Preheat the oven to 190°C/170°C fan/gas mark 5.
Mix the Fate Low Protein All-Purpose Mix and the butter in a bowl with your fingertips until you reach a breadcrumb consistency.
Add the saffron, salt, yeast, psyllium husk, sugar, mixed spice, sultanas and raisins and mix thoroughly.
Pour in the ProZero and mix with a spatula, until a wet dough forms.
Cover and leave to rise in a warm place for 40 minutes.
Place the dough in the loaf tin and bake in the oven for 45 minutes or until golden.
Allow to cool on a wire rack before serving.
You will need a lined 25cm loaf tin.
