Rice pilau

step 1

Heat oil in a frypan.

Add onion and cook until it starts to become soft.

step 3

Add garlic, capsicum, carrot and curry powder and stir through for several minutes.

step 4

Add rice and stir to coat in the cooking mixture.

step 5

Add vegetable stock mixture, stir well, cover and simmer on low for 10 minutes. Turn heat off and allow to stand for 5 minutes.

step 6

Stir through crumbled biocheese feta and spinach leaves and serve.

  • 1 tbsp olive oil
  • 1 small onion/100g, diced
  • 1 capsicum/200g, diced
  • 1 carrot/100g, diced
  • 2 garlic cloves/6g, crushed
  • 1 tsp curry powder
  • 1 vegetable stock cube dissolved in 1 cup boiling water
  • 200g Mevalia rice
  • 1/2 block/100g crumbled biocheese feta
  • 1 cup/45g baby spinach leaves
