Heat oil in a frypan.
Add onion and cook until it starts to become soft.
Add garlic, capsicum, carrot and curry powder and stir through for several minutes.
Add rice and stir to coat in the cooking mixture.
Add vegetable stock mixture, stir well, cover and simmer on low for 10 minutes. Turn heat off and allow to stand for 5 minutes.
Stir through crumbled biocheese feta and spinach leaves and serve.
