Raw Rainbow Noodles with Spicy Coconut Dressing

Step 1

Using a spiralizer, make zucchini and carrot “noodles” ; place into a medium sized bowl. 

Step 2

Add capsicum, spring onion, coriander and tomato to ”noodles”; mix well  set aside. 

Dressing
Step 1

Mix all dressing ingredients together and pour over  “noodle” mix. Stir through.  Sit for 2-3 minutes to allow flavours to develop; then serve. 

Top Tip:

If you do not have a sprulizer, use a vegetable peeler to create desired result.

  • Noodle’s
  • 1 small zucchini
  • 1 medium carrot
  • 1 red capsicum; finely sliced
  • 2 spring onion; peeled and chopped
  • 1 Tbsp chopped fresh coriander
  • 1 small tomato; diced
  • Dressing
  • 1/3 cup ProZero + 1 tsp coconut essence
  • 1 Tbsp lemon juice
  • 1 tbsp Mango chutney
  • 1 tsp crushed garlic
  • A pinch Chilli powder (optional to taste)
  • 1 tbsp Orange juice*
