Raspberry Icy Poles

  • RECIPE MAKES: Serves 8
  • PREP TIME: 10min
  • COOK TIME: Freezing time (4+ hours depending on freezer.)
Step 1

Add the raspberries to a blender with a little bit of the lemonade (1/4 cup) and blend till smooth.

Step 2

Pass through a sieve to remove the seeds from the puree.

Step 3

Add the puree to a large jug with 2 cups of slightly flat lemonade and the lemon juice

Step 4

Mix with a fork or whisk to combine

Step 5

Spread mixture into ice block moulds and cover with lid.

Step 6

Place in the freezer until frozen.

Step 7

Once frozen, take out of freezer and place under running water to loosen from mould and then pop the remainder into a ziplock bag and put back in the freezer.

 

Step 8

Icy poles are then ready to grab and enjoy when required.

  • 1 cup of raspberries
  • 2 1/4 cups of slightly flat lemonade (Woolworths or Coles brand lemonade)
  • 2-3 tbs of fresh lemon juice
  • ice pole moulds (these can be found at your local Kmart or kitchen shop).
