Pumpkin Pie

  • COOK TIME: 1 hr 10 minutes
  1. To make the pastry, rub the Fate Low Protein All-Purpose Mix and margarine together with your fingertips in a mixing bowl until it resembles coarse breadcrumbs.
  2. In a separate bowl, add the sugar, cinnamon and water and stir until the sugar has dissolved.
  3. Then add to the Fate and margarine mixture and combine until a pastry dough ball is formed.
  4. Leave to rest for 10 minutes.
  5. Meanwhile, dust a work surface with Fate Low Protein All-Purpose Mix and knead the pastry for one minute until smooth.
  6. Roll the pastry out with a rolling pin and place in the lined baking tin.
  7. Preheat the oven to 200°C/180°C fan/gas mark 6.
  8. To make the filling, place the pumpkin, brown sugar, mixed spice, golden syrup and butter in a saucepan and cook over a medium heat for 15 mins or until softened.
  9. Using the hand-held blender, blend the mixture until smooth.
  10. In a separate bowl, cream together the sugar and margarine.
  11. Add the Fate Low Protein All-Purpose Mix and the baking powder and rub together with your fingertips until it resembles breadcrumbs.
  12. In another bowl, mix the ProZero, egg replacer and vanilla essence.
  13. Add the ProZero mixture to the dry mixture and stir until well combined. Finally, add the pumpkin mixture and stir until well combined.
  14. Arrange the marshmallows evenly over the pastry base.
  15. Pour the pumpkin mixture on top and bake in the oven for 30 minutes.
  16. Remove from the oven and leave to cool.
