                  Pumpkin and onion skewers

              Method
            
            
          Step 1
                  
        Cut pumpkin into 3cm cubes.
          Step 2
                  
        Place cubes in a microwave-safe dish; add 1 tbsp cold water; cover and microwave on High for 4 minutes or until just tender.
          Step 3
                  
        Drain; set aside; 10 mins to cool. .
          Step 4
                  
        Trim onion bulbs, leaving 1cm of stalk; thread pumpkin and onion alternately onto skewers.
          Step 5
                  
        On grill or BBQ over a medium-heat, grill vegetable skewers until tender approx. 10mins. Meanwhile, brush with maple syrup and turn several times to avoid sticking and burning.
          Step 6
                  
        Take off grill; sprinkle with thyme and serve.
Top tip:
Be careful glazing skewers on BBQ incase maple syrup catches fire.

        - 1kg butternut pumpkin; peeled
 - 12 spring onions
 - Olive oil cooking spray
 - 1/3 cup maple syrup (see top tip)
 - Fresh thyme leaves
