This fresh and colourful low protein poke bowl is packed with crunchy vegetables, vibrant flavours and plenty of texture. Perfect for lunch or dinner, it's easy to customise with your favourite low protein toppings.
Place rice in a small microwave safe dish, cover with water. Using a fork, ensure rice is evenly spread across the base of the dish. Microwave on high, 3min. Stir briefly, microwave on high, further 1min. Leave rice to cool.
Whilst the rice is cooling, prepare all of your vegetable ingredients by chopping, slicing and dicing into medium size pieces.
Add all ingredients to a bowl and top with lime, salt to taste, sesame seeds and chili mayo.
Serve and enjoy.

For easy meal prep, prepare the rice, chop the vegetables and mix the dressing in advance. Store each component separately in the fridge, then simply assemble your poke bowl when you're ready to eat.

- ½ large carrot
- ¼ large mango
- 3 mini cucumbers
- 2 large radishes
- 1 spring onion
- ½ fresh lime or 10ml lime juice
- 3g sesame seeds**
- 5g chili mayo**
- Pinch of salt
