Pan Fired Gnocchi

Comfort food 101, homemade gnocchi.

step 1

In a medium saucepan bring water to boil.

Cut up carrots and add to the boiling water for 20min or until fork tender, drain and let the carrots cool completely.

Set-up food processor, add carrots and FATE mix and blitz for 30sec or until a dough is formed.

step 4

In a medium saucepan bring salted water to boil.

step 5

On a clean bench sprinkle some extra flour and place dough on bench and divide into 4 equal parts.

step 6

Using a rolling pin, roll each dough part into the shape of a long sausage.

Cut each sausage into approx. 2cm pieces

step 8

Place each 2cm piece of dough into boiling water and cook for 4-5min or until they rise to the surface. Lift from the pot with a slotted spoon and leave to cool in a single layer on a tray.

Once cooled, drizzle oil over gnocchi and toss gently with your hands to coat.

step 10

When ready to serve, heat the butter in a frying pan, then fry the gnocchi in a few batches until crisp and golden. Keep warm and serve.

It can be made a day ahead then pan-fried to crisp up just before serving.
