One Pot Broccoli Pasta

This easy-to-make One Pot Broccoli Pasta is a quick and simple meal for anyone on a PKU, low protein diet. It only uses 4 ingredients and serves 2 people with only 3g of protein per serve.

 

Step 1

Put water on to boil for pasta. 

Step 2

Weigh broccoli and cut into small pieces.  

Step 3

Finely chop garlic. 

Step 4

Put 2 serves of preferred pasta on to cook, as per instructions for pasta. 

Step 5

Approx. 1 minute before pasta is cooked add chopped broccoli to the pot. Bring back to the boil for about a minute until broccoli is cooked, then drain pasta and broccoli together. 

Step 6

With the retained heat in the pan (or on low heat) add the olive oil and finely chopped garlic. Cook until just starting to colour (don’t allow to darken as it will go bitter). 

Step 7

Add back drained pasta and broccoli and stir to coat with olive oil and garlic. 

Step 8

Serve half and save remainder for another meal.

TOP TIP

Can use frozen broccoli if unable to use fresh, will just need a little more time to cook.  

Can also use other combinations of low protein vegetables if required or desired.

 


 

  • 180g broccoli, chopped into florets 
  • 3 cloves garlic (adjust to taste) 
  • 1 Tbsp olive oil 
  • 2 serves of Mevalia Ditali pasta
