Mushroom Caesar Salad

Combine cucumber, lettuce, tomatoes, mushrooms (if using) and cheese in a small bowl.
Pour dressing over vegetables and toss.
Serve immediately.
Top tip:
Try adding croutons to this salad before dressing. Ready-made croutons may contain protein, whilst home-made croutons can be prepared with low protein bread.
Try using different cheeses – low protein feta cheese* with Greek salad dressing tastes great.
