Mushroom and Leek Flan

To make the pastry:
  1. Rub the Fate low protein all-purpose mix and the margarine together in a mixing bowl until it resembles breadcrumbs.
  2. Add the mixed herbs and some salt and pepper to season.
  3. Add the water and stir until combined.
  4. Leave to rest for 10 minutes.
  5. Dust a clean work surface with Fate low protein all-purpose mix and knead the pastry for a minute on the work surface until smooth.
  6. Roll the pastry out with a rolling pin until slightly larger the flan dish, then press into the flan tin.
To make the filling:
  1. Pre-heat oven to 200°C/180°fan/gas mark 6.
  2. Heat a pan over a medium heat, add the butter, garlic, leeks, mushrooms and tarragon to the pan and cook until the vegetables they are soft.
  3. Add the ½ tsp of Fate low protein all-purpose mix and stir gently.
  4. Add 30ml of ProZero and stir into the vegetable mixture.
  5. Divide the filling mixture between the four pastry cases.
  6. Sprinkle the grated Violife on top of each flan.
  7. Bake in the oven for 12 minutes.
ProZero and Fate low protein all-purpose mix are foods for special medical purposes and must be used under medical supervision.
