Mushroom and Leek Flan

  • RECIPE MAKES: 4 portions

To make the pastry:
step 1

Rub the Fate low protein all-purpose mix and the margarine together in a mixing bowl until it resembles breadcrumbs.

step 2

Add the mixed herbs and some salt and pepper to season.

 

step 3

Add the water and stir until combined.

Step 4

Leave to rest for 10 minutes.

step 5

Dust a clean work surface with Fate low protein all-purpose mix and knead the pastry for a minute on the work surface until smooth.

step 6

Roll the pastry out with a rolling pin until slightly larger the flan dish, then press into the flan tin.

To make the filling:
step 1

Pre-heat oven to 200°C/180°fan/gas mark 6.

step 2

Heat a pan over a medium heat, add the butter, garlic, leeks, mushrooms and tarragon to the pan and cook until the vegetables they are soft.

step 3

Add the ½ tsp of Fate low protein all-purpose mix and stir gently.

step 4

Add 30ml of ProZero and stir into the vegetable mixture.

step 5

Divide the filling mixture between the four pastry cases.

step 6

Sprinkle the grated Violife on top of each flan.

step 7

Bake in the oven for 12 minutes.

  • To make the pastry:
  • 250g Fate low protein all-purpose mix (plus extra for dusting)
  • 125g Soft Margarine
  • 1 tsp Mixed Herbs
  • Salt and pepper (optional)
  • 50ml Water
  • For the filling:
  • 10g Butter
  • ½ Garlic clove, crushed
  • 30g Leeks, trimmed and finely chopped
  • 30g Mushroom, sliced
  • ½ tsp Dried Tarragon
  • ½ tsp Fate low protein all-purpose mix
  • 30ml ProZero
  • 15g grated Violife original, grated
  • Pinch of Tarragon
