Mint Chip Ice 'Cream'
- RECIPE MAKES: approx. 1 litre
- COOK TIME: 3hrs 15mins
Method
Step 1
Add ProZero whipping ‘cream’ into a bowl and use an electric hand-held mixer to whip the for about 2-3 minutes until it is thickened, light and airy.
Step 2
Add the mint extract, sugar and green food colouring to the ‘cream’ and mix well.
Step 3
Pour the mixture into an ice cream maker and follow manufacturer’s instructions.
Step 4
Mix in chopped Vitabite then serve.
Top Tip:
For a more intense flavour, mix in some finely chopped mint leaves.

- 2 tsp Mint extract
- 90g Caster sugar
- 2 tsp of Green food colouring (optional)
- 3 Vitabite bars, chopped into small chunks
