Preheat oven to 230°C.
Heat olive oil in a large frying pan over medium-high heat. In batches, add zucchini and fry 1-2 mins each side; until golden, season with salt and pepper.
Place zucchini rounds onto a large oven tray lined with baking paper. Spread each round with sauce, top with a little mozzarella.
Bake rounds in oven 3-5 mins until cheese has melted and bubbling. Serve, sprinkled with Italian herbs.
