Mini zucchini ‘margarita’ pizzas

Step 1

Preheat oven to 230°C.  

 

Step 2

Heat olive oil in a large frying pan over medium-high heat. In batches, add zucchini and fry 1-2 mins each side; until golden, season with salt and pepper. 

Step 3

Place zucchini rounds onto a large oven tray lined with baking paper.  Spread each round with sauce, top with a little mozzarella. 

 

Step 4

Bake rounds in oven 3-5 mins until cheese has melted and bubbling.  Serve, sprinkled with Italian herbs.

  • 1 Tbsp olive oil 
  • 3 medium zucchini, cut into 1/4-inch thick rounds 
  • Salt and freshly ground black pepper, to taste 
  • 1/3 cup tomato based sauce 
  • 1/2 cup Bio cheese shred pizza ® 
  • 1 Tbsp dried mixed Italian herbs
