Mango and Red Capsicum Salsa

Step 1

Place the mango, capsicum, onion and mint in a medium bowl.

Step 2

Whisk together lime juice, oil, mirin and ginger. Add to the salsa and gently toss to combine.

 

Step 3

Set aside for 10mins before serving to allow flavours to develop.

Top tip:

Serve with low protein corn chips for a protein free snack idea.

  • 2 firm ripe mangoes, stone and skin removed, diced 
  • 1 small red capsicum, seeded, diced 
  • 1/2 small red onion, finely chopped 
  • 1/4 cup fresh mint, chopped 
  • 1 tbsp lime juice 
  • 2 tsp mirin 
  • 1 tsp fresh ginger, finely grated
