Mac 'N "Cheese"

A delicious and easy meal the whole family can enjoy all year round.

step 1

Cook pasta as per manufactures directions. 

step 2

Peel sweet potato and dice into small/uniform pieces and steam until fork tender.

Using a blender add steamed sweet potato, butter, milk alternative, turmeric and stock powder and blend until smooth.

step 4

If desired consistency is not achieved with milk alternative alone, add 40-80ml of water in small amounts until desired constency is achieved.

Once desired consistency is achieved, add vegan cheese and give it a good blitz.

Add pasta and sauce to a pan and cook over low heat, mixing the sauce through the pasta until all pasta is coated and vegan cheese has fully melted and then serve.

  • 400g cooked Mevalia Ditali pasta
  • 180g sweet potato (steamed/for tender)
  • 1 Tbsp butter or margarine
  • 70ml milk alternative
  • 45-90mls water
  • 1/8 tsp turmeric
  • 2g salt reduced vegetable stock powder (Massel)
  • 1/4 cup vegan cheese shred (Bio Cheese)
