Cook pasta as per manufactures directions.
Peel sweet potato and dice into small/uniform pieces and steam until fork tender.
Using a blender add steamed sweet potato, butter, milk alternative, turmeric and stock powder and blend until smooth.
If desired consistency is not achieved with milk alternative alone, add 40-80ml of water in small amounts until desired constency is achieved.
Once desired consistency is achieved, add vegan cheese and give it a good blitz.
Add pasta and sauce to a pan and cook over low heat, mixing the sauce through the pasta until all pasta is coated and vegan cheese has fully melted and then serve.
