Lusciously Lemon Tarts

  • RECIPE MAKES: 3 tarts
  • COOK TIME: 1hr 10mins (+2 hours in the fridge to set)
Step 1
  1. Rub the Fate Low Protein All-Purpose Mix, margarine and caster sugar together in a mixing bowl, until it resembles coarse breadcrumbs.

  1. Add the water to the Fate mixture and mix to form the pastry dough.

  1. Leave to rest for 10 minutes.

  1. Dust a clean work surface with Fate low protein all-purpose mix and knead the pastry for 1 minute, until smooth.

  1. Using a rolling pin, roll the pastry out between two pieces of grease proof paper to a 32cm diameter circle.

  1. Using the cookie cutter, cut out 3 circles of pastry.

  1. Lift the pastry circles into pastry dishes and press the pastry around the edge of the baking tin using your thumb.

  1. Cut the excess pastry off the sides of the dishes and using a fork, prick the pastry base.

  1. Bake in the oven for 10 minutes or until golden brown.

  1. Set aside and allow to cool.

  1. For the filling, add the ProZero, lemon curd, butter, sugar, lemon and orange zest to a pan over a medium heat and cook until smooth and combined.

  1. Mix the cornflour with 2tsp of water until it forms a smooth paste.

  1. Add to the ProZero mixture and whisk until thick.

  1. Add the lemon and orange juice and using an electric hand-held blender, blend until smooth.

  1. Chill in the fridge for 1 hour or until cool.

  1. Once chilled, divide into the cooked pastry cases.

  1. Place the jelly into a microwaveable bowl and heat in the microwave for 1 minute or until runny.

Spoon the jelly evenly, into pastry cases on top of the ProZero mixture and set in the fridge for 1 hour or until set.

Serving Suggestion

Serve with low protein cream or ice cream.

 

Top Tip!

Use different flavour jelly on the top for a mixed fruit option!

  • 250g Fate Low Protein All-Purpose Mix (plus extra for dusting)
  • 125g Soft margarine
  • 30g Caster sugar
  • 60ml Water
  • For filling:
  • 125ml ProZero
  • 40g Permitted lemon curd
  • 75g Butter
  • 20g Sugar
  • Zest and juice of 1 lemon
  • Zest and juice of 1 orange
  • 20g Cornflour
  • 2 tsp Water
  • 125g Hartley’s Orange or Lemon flavour jelly pot
