Light Cream of Celery Soup

A super easy soup to make, not only does it taste great, it is super healthy! Enjoy. 

step 1

Place potato, celery, water, and salt in a medium sized saucepan. Bring to the boil, turn heat down, and simmer covered, 15min; until vegetables are soft. Using a food processor or blender, puree, and transfer to a large saucepan.

step 2

Melt butter (or margarine) in a small fry pan. Add onion, cumin, and extra salt. Sauté 8min; until onion is soft. Add to puree.

step 3

Stir in ProZero, and pepper. Heat gently. 

step 4

Serve while hot.

Storage Suggestion

 

Leftover soup stores well if kept in an airtight container for up to 2-3 days.

 


 

  • 150g peeled, diced potato
  • 4 cups chopped celery
  • 3 cups water
  • 1 ½ tsp salt (plus ½ tsp extra)
  • 2 Tbsp butter or dairy free margarine
  • 2 large brown onions, peeled, finely diced
  • 1 tsp ground cumin
  • 1 cup ProZero (dairy free milk alternative)
  • White pepper, to taste
