Cut leek and spring onion into 1cm thick slices.
Sautè leek and onion over medium heat in a large non-stick frying pan with 1 Tbsp of oil,
10-12mins., or until very soft. Remove vegetables from heat, place in a medium sized bowl.
Add Mix, spices, chilli, and baking powder. Mix well. Add water and re-mix. Allow to rest, 2-3mins., until slightly firm.
Wipe frying pan clean, add remaining oil, heat to medium. Spoon the vegetable mixture into the pan to make four medium sized fritters. Cover pan, fry for 3mins., or until crisp on one side. Turn fritters over and fry, covered, further 3mins.
Serve warm with a squirt of lemon or lime juice.
