Lazy Sushi

Low protein lazy sushi is a fun and fuss-free twist on a classic favourite. Fresh and simple, packed with vegetables, fluffy rice and all the flavours of sushi, it's perfect for a quick lunch, dinner or meal prep option. No bamboo mat? No problem! Simply layer your ingredients in a bowl and enjoy all the flavours of sushi without the rolling.
Place rice in a small microwave safe dish, cover with water. Using a fork, ensure rice is evenly spread across the base of the dish. Microwave on high, 3min. Stir briefly, microwave on high, further 1min. Let the rice cool.
Whilst the rice is cooling, prepare your ingredients.
Drain and shred the jackfruit. Remove extra moisture by dapping with a paper towel.
Cut the avocado in half and scoop 1 half out using a tbsp., maintaining its shape. Slice the avocado into thin slices.
Using scissors, cut the nori seaweed into the shape and size of the bowl you’re using (recommend a small – medium glass square bowl).
Once cool, combine the rice with the plant based cream cheese and mix until it’s formed a sticky consistency.
Line the glass bowl with clingfilm and add the ingredients in the following order, firmly pressing them down: avocado, jackfruit, salt to taste, rice mixed with cream cheese and nori seaweed.
Once firmly pressed, remove the mixture from the container, flip onto a serving dish, remove the cling film, cut into squares and serve.

TOP TIPS
Drizzle with your favourite low protein-friendly sauce, and add condiments, just before serving for an extra burst of flavour. Pairs perfectly with pickled ginger and soya sauce**.
