Jam Tarts

Step 1

Preheat oven to 190°C/fan 170°C/gas mark 5.

Step 2

Rub the Fate Low Protein All-Purpose Mix, margarine and caster sugar together in a mixing bowl, until it resembles coarse breadcrumbs.

Step 3

Add the water to the Fate mixture and mix to form the pastry dough.

Step 4

Leave to rest for 10 minutes.

Step 5

Dust a clean work surface with Fate Low Protein All-Purpose Mix and knead the pastry for 1 minute, until smooth.

Step 6

Using a rolling pin, roll the pastry out between two pieces of grease proof paper to a 28cm diameter circle.

Step 7

Using the cookie cutter, cut 24 circles out of the pastry.

Step 8

Lift the pastry circles into pastry dishes and press the pastry around the edge of the baking tin using your thumb.

Step 9

Cut the excess pastry off the sides of the tin and using a fork, prick the pastry base.

Step 10

Spoon 1 tbsp of jam into each of the pastry cases.

Step 11

Bake in the oven for 15-20 minutes or until golden brown.

Step 12

Set aside and allow to cool.

Serving Suggestion:
Serve with a dollop of low protein ‘cream’ or custard (see recipes).

 

Top Tip:
Replace the jam with Vitabite or golden syrup if you prefer!

  • 250g Fate Low Protein All-Purpose Mix (plus extra for dusting)
  • 125g Soft margarine
  • 30g Caster sugar
  • 60ml Water
  • For filling:
  • 360g Assorted jams (i.e. Apricot, Blackberry, Strawberry)
