Jackfruit Thai Green Curry

- COOK TIME: 35 minutes
Method
Step 1
Heat the oil in a frying pan on a medium heat.
Step 2
Add the jackfruit, baby corn, leek, red pepper, mushrooms, spring onion, courgette, garlic, chilli and lemongrass, and cook for 5 minutes.
Step 3
Stir in the Chinese 5 spice and simmer for a minute.
Step 4
Pour in the coconut milk and ProZero, cook for a further 15 minutes and serve.
Serving Suggestion
Serve with low protein rice.
Top Tip!
Add more chilli for a spicy kick!

- 2 tbsp Sesame oil
- 140g Tinned jackfruit, drained and shredded
- 50g Baby corn, sliced
- 50g Leek, sliced
- 50g Red pepper, thinly sliced
- 50g Mushrooms, thinly sliced
- 50g Spring onion, thinly sliced
- 50g Courgette, thinly sliced
- 2 Garlic cloves, crushed
- ½ Green chilli, finely sliced
- 1 stalk Lemongrass
- 1 tbsp Chinese 5 spice
- 100ml Light coconut milk
- 100ml ProZero
