Heat the oil in the deep fat fryer, as per manufacturer instructions.
Place the jackfruit in the basket of the deep fat fry and cook for 1 minute or until crispy.
Add the cooked jackfruit into a bowl with the pepper, onions and plum sauce and mix until combined.
Lay the rice paper down on a chopping board in a diamond shape.
Place 2 tbsp of the filling onto the bottom of the rice paper.
Roll the bottom point of the rice paper upwards twice and fold in the sides to the middle.
Continue to roll upwards, to make the spring roll.
Place the spring rolls into the basket of the deep fat fryer and cook for 2 minutes or until crispy.
Remove the cooked spring rolls from the fryer basket using a slotted spoon, place on a kitchen towel to drain the oil and serve.
Serve with plum sauce.
Add sliced chilli for a spicy kick!
