Jackfruit Fried Rice

Step 1

Heat oil in a medium-sized fry-pan over high heat.

Step 2

On medium heat, fry the garlic, chopped vegetables and jackfruit in the oil and cook for 5 minutes.

Step 3

Add sprouts and rice; stir fry 2 minutes more or until heated to desired temperature.

 

Step 4

Stir through optional chilli sauce and serve.

  • 1 Tbsp Sesame oil 
  • ½ x 400g tin ”Organic Young Jackfruit” (Available at select Woolworths stores)  
  • 6 mushrooms; chopped  
  • 1 small red capsicum; diced 
  • 1 medium carrot; peeled and diced  
  • 2 spring onions; chopped  
  • 2 tsp crushed garlic  
  • ½ cup bean sprouts 1 cup Low protein rice; cooked according to packet instructions 
  • Sweet chilli sauce (optional - to serve)
