Grilled Pineapple with (Cheats) Mango Soft Serve

Nothing beats fruit and ice-cream on a warm summer’s night... here’s our take on this favourite – grilled pineapple with mango soft serve!  Too good! 

Mango Soft Serve

step 1

Combine sugar and ½ the coconut milk in a small saucepan over medium-high heat, cook, stirring 2-3min., until sugar dissolves. Bring to boil, remove from heat, set aside to cool.

Place mango, lime juice, cooled sugar mixture, and remaining coconut milk into a blender, pulse until smooth.

Transfer to an airtight container, place in the freezer 2-3hrs, until firm.

Pineapple 

step 1

Place brown sugar onto a plate, add pineapple, turn to coat.

step 2

Heat butter/margarine in a large non-stick frying pan, over high heat. Add coated pineapple, in a single layer, fry, turning once, and shaking pan often, 8-10min., until golden. Transfer to a plate.

Add lime juice and 1 Tbsp water to the pan, heat, stirring, 1-2min., until heated.

step 4

Divide pineapple (and syrup) among serving plates. Drizzle with lime juice mixture. Sprinkle with mint leaves. Serve with mango soft serve.

  • 2 Tbsp Brown sugar
  • 1 pineapple, peeled, cored, cut into 1-cm thick slices
  • 2 Tbsp butter or dairy free margarine
  • Mint leaves, to serve
  • For Mango Soft Serve
  • ½ cup caster sugar
  • ½ cup (125ml) coconut milk
  • 300g frozen, chopped, mango
  • 1 lime, juiced
