Fully Loaded Baked Sweet Potato

Step 1

Pre-heat oven to gas mark 200°C/ 180°C fan.

Step 2

Microwave potato until just tender (8 minutes on high), using a bit of oil spray over the potato before baking, place in pre-heated oven for 10 minutes.

Step 3

Once the sweet potato is cooked, cut the top of the potato into quarters.

 

Step 4

Top potato with sour cream and sprinkle spring onion and shallots on top.

Top Tip:

Optional protein free side salad of tomato, lettuce, capsicum, cucumber and carrot.

  • 200g Sweet potato, washed
  • Cooking oil spray
  • 1tbsp Light cream cheese
  • 1 x Spring onion/challot, sliced
