French Onion Rice

Caramelized onion, “buttery” rice, and melted (dairy free) cheese, what’s not to like about this dish? Serve with a large salad for a complete meal.  Enjoy!

step 1

Heat oil in a large saucepan. Add onion, and saute over medium heat 15min. Add salt, lower heat, continue to cook further 10min., stirring frequently (you can cook longer for really delicious, well-done onion).  Transfer to a bowl.

To the saucepan, add 1 Tbsp butter, allow to melt, then add thyme and pepper, stir 1min., until fragrant. Add wine, cook, stirring until almost evaporated.

Add remaining butter, allow to melt, then add the rice, stirring 3-4min., until grains are toasted. Return ¾ of the onion to the saucepan. Stir to combine.

Stir in stock, bring to the boil, then reduce heat and cover.  Simmer 9-11min., until rice is tender. Remove from heat, stand (covered) 5min.  Remove lid, fluff rice gently with a fork.

Top with remaining onion, dairy free parmesan, thyme, and a squeeze of lemon juice.

Serve hot.

Leftover French onion rice stays fresh in an airtight container, in the refrigerator for 2-3 days.  

 


 

  • ¼ cup olive oil
  • 2 Tbsp butter or dairy free margarine
  • 4 large onions, peeled, thinly sliced
  • ½ tsp salt
  • 1 Tbsp dried thyme
  • 1 tsp freshly ground pepper
  • ½ cup dry white wine, optional
  • 2 cups low protein rice (i.e., Mevalia)
  • 2 ½ cups vegetable stock
  • Dairy free shredded parmesan (i.e., Biocheese Parmesano)
  • Fresh thyme leaves, optional
  • Fresh lemon juice, optional
