A fresh simple salad with plenty of flavour.
To make the pickling liquid combine the sugar and vinegar and stir until dissolved. Add in the sliced onion and mix gently making sure the onion is fully covered by the liquid. Leave to stand for 30mins then drain liquid.
Make the dressing by combining all the dressing ingredients into a small jar, cap and shake. Stand aside until ready to serve salad.
Roughly chop tarragon, chives and parsley and combine together.
Remove skin from the apple or pear and chop into fine slices or small cubes.
Tear lettuce leaves into bite size pieces and assemble onto plate or platter. Drizzle with about half the dressing and gently toss with your hands. Scatter over fresh herbs, pickled onion, and apple or pear. Drizzle lightly with more dressing and serve immediately.

Serve with a bowl of soup, low protein bread or pasta.
Add protein from your allowance to the salad as desired such as avocado.
Top Tip
Chopped herbs, pickled onion and dressing can be prepared ahead of time and kept in refrigerator for 2-3 days making it super easy and quick to throw together a delicious salad.
