Frankenstein Cupcakes

  • RECIPE MAKES: 6 Cupcakes

Step 1

Pre-heat oven to 200°C/180°C Fan/gas mark 6.

Step 2

Make up the Fate low protein chocolate flavour cake mix following the instructions on the packet.

Step 3

Divide the mixture equally between the cupcake cases.

Step 4

Bake in the oven for 20 minutes. Once baked, remove from the oven and allow to cool completely.

Step 5

Whilst the cakes are cooling, roll out the green fondant icing and use a large round cookie cutter to cut out green circles about 1 inch larger than the cupcakes.

Step 6

Roll out the black fondant and use a blunt knife to cut out black hair and eyebrows.

Step 7

Brush a thin layer of water on the green fondant to stick on the hair and eyebrows, then add the edible sugar eyes.

Step 8

Cut a slice below the eyes to make the mouth.

Step 9

Fill a piping bag with the buttercream and pipe onto the centre of each cupcake, about 1.5 inches high.

Step 10

Place the monster face onto the icing, pressing down the edges.

Tip: Placing a little pressure onto each side of the mouth will make the buttercream ooze out.

  • 250g Fate low protein chocolate flavour cake mix
  • 65g Soft margarine
  • 125ml Water
  • To decorate:
  • 400g Betty Crocker vanilla buttercream style icing
  • 200g Green fondant icing
  • 200g Black fondant icing
  • 16 Edible sugar eyes
  • You will need 6 cupcake cases, a piping bag with a thick round nozzle and a circle shaped cookie cutter.
