
Five-Minute Chocolate Cup Pudding

A quick and simple gluten-free, low-protein dessert you can make in the microwave. Perfect for when you want a chocolate treat in just two minutes!

Grease a microwave-safe cup/mug with oil or butter (recommend using a small cup mug ≈200-250ml).
In a small bowl, combine the flour, chocolate mix, sugar, baking powder, and salt.
Stir in the softened coconut oil, milk, and vanilla extract. Mix well until smooth and fully combined.
Pour the batter into the prepared mug.
Ensure the cup is no more than ½ to ⅔ full (overfilling may cause it to overflow).
Microwave on high for 2 minutes, until the centre is just set. (Be careful — too much baking powder or overfilling can cause it to rise too quickly and spill.)
If desired whip vegan cream until aerated and fluffy and garnish with Nesquik chocolate powder.
Allow to cool slightly before eating.

Add 1 Tbsp vegan chocolate chips for topping as an optional topping.
This pudding was made using Well & Good Gluten free Plain Flour (2.3g/100g) which can be bought at Woolworths. However you can use any Gluten Free All Purpose/Plain Flour
The whipping cream is Flora Plant Based Thickened Cream
- ¼ cup gluten-free flour
- 2 Tbsp Nesquik chocolate mix
- 2 Tbsp white sugar
- A pinch of baking powder (extra optional for fluffiness)
- ½ pinch of salt
- ¼ cup low-protein/protein free milk
- 1 Tbsp softened coconut oil
- ¼ tsp vanilla extract
- 200ml of Vegan thickened cream
